Grease from grills, fryers, ovens, and griddles, is extracted by the kitchen exhaust hood, taken through the vent filters, and expelled via ductwork that leads to an exhaust fan, often on the roof.
Grease and grease vapors can ignite and a simple spark can spread fire quickly throughout the system, causing severe damage and danger for people and property.
Grease can also support germs and bugs detrimental to public health.
If it is your restaurant, you are responsible for ensuring that your exhaust system is safe.

In order to understand grease, we need to define it.
According to Encyclopedia Britannica, grease is defined as a thick oily substance consisting of inedible lard, the rendered fat of waste animal parts.
There are also petroleum and synthetic types of grease, but for cooking purposes, we are dealing with the basic inedible lard-the rendered fat of waste animal products.
How does grease get up on the roof?
Grease much like water, vaporizes at high cooking temperatures.
This vapor rises up from fryers or cooking surfaces and is drawn into the hood system (aka kitchen exhaust system), then thru the ductwork and up towards the rooftop fan which is sucking the vapor out to expell it into the air.

I just wanted to let you know that your crew that came to the restaurant the other night did a fabulous job.
They set up quickly and then spent a lot of time on the roof and in the vents getting everything very clean.
When they finished, all the stainless looked brand new and they did a great job cleaning up.
Thanks again for doing such a great job.
See you in a few months!
